Having a Fall or Halloween party this week? I am! And I know just what I’m going to make for it… Candy Corn Cupcakes with vanilla buttercream frosting!! This recipe is incredibly fast and simple to make and is a hit for kids and adults, alike! Happy baking!
Cupcake ingredients:
- Box white cake mix
- Oil, water and eggs (per directions on back of box; each mix is different..)
- 1 tsp vanilla
Step 1: Make cake mix as directed on back of box, adding 1 tsp vanilla.
Step 2: Separate into three bowls and add food coloring to two, making them orange and yellow.
Step 3: Layer cake mixes in tin; first yellow, then orange and lastly, the white.
Step 4: Bake per directions on box.
Step 5: Let cool and make up frosting.
Vanilla buttercream frosting ingredients:
- 1 cup unsalted butter (2 sticks), softened
- 3 cups powdered sugar
- 1/4 tsp salt
- 1 tbs vanilla
- 3-4 tbs milk
Step 1: Beat butter with mixer until smooth.
Step 2: Turn beater to low and add in powdered sugar, mixing until combined.
Step 3: Turn beater to medium and mix in salt and vanilla.
Step 4: Add 3 tbs milk and beat for 2-3 mins or until desired consistency has been reached. (If more milk is needed, add the last tbs)
Step 5: Frost the cooled candy corn cupcakes and enjoy!

I read that today was national candycorn day, and my local cupcakery has candy corn cupcakes. I was kind of shocked to see they did not offer any today. These look yummy!
